Winter has returned to the Great White North and what better to settle in with a comfort food that will be both warming and adding a twist for those wanting not to sacrifice taste for health. This recipe does contain both pork and dairy but keeps the carbs low for those eating Keto/low carb. I have included options to make it dairy or pork free for those avoiding those foods.
Caramelized Onion and Parmesan Smothered Pork Chops
Ingredients
1.5 lb center cut boneless pork chops ** can opt for boneless chicken breasts for an alternative
½ medium onion, sliced
2 garlic cloves, minced
2 tablespoons of avocado or coconut oil
1 cup heavy whipping cream ** or 1 can of coconut milk
1 oz cream cheese ** Omit if dairy-free
⅓ cup chicken broth
⅓ cup parmesan cheese ** replace with 1/3 cup of Brewer's Yeast
½ cup cheddar cheese ** omit or replace with dairy-free cheese such as Daiya
1 tablespoon Italian seasoning
½ teaspoon pepper
salt to taste
Instructions:
Heat pan on medium/high heat, add 2 TBSP of avocado oil, saute onions until caramelized, add garlic and brown the pork chops (approx 3-5 minutes each side).
Remove pork chops/chicken from pan.
Add remining ingredients, and cook on medium until sauce thickens, whisk and stir continuously.
Add pork chops/chicken back to sauce mixture and simmer on low for 5 minutes or until done.
Simple Cucumber Salad
Ingredients:
1 field cucumber
1 TBSP Italian Seasoning
1 TBSP Apple cider vinegar
2 TBSP Extra virgin olive oil
Instructions:
Slice cucumber into thin slices
Add Italian seasoning, apple cider vinegar and olive oil and mix well.
Serve as a delicious side.
