Caramelized Onion & parmesan Smothered pork chops


Winter has returned to the Great White North and what better to settle in with a comfort food that will be both warming and adding a twist for those wanting not to sacrifice taste for health. This recipe does contain both pork and dairy but keeps the carbs low for those eating Keto/low carb. I have included options to make it dairy or pork free for those avoiding those foods.


Caramelized Onion and Parmesan Smothered Pork Chops


Ingredients

  • 1.5 lb center cut boneless pork chops ** can opt for boneless chicken breasts for an alternative

  • ½ medium onion, sliced

  • 2 garlic cloves, minced

  • 2 tablespoons of avocado or coconut oil

  • 1 cup heavy whipping cream ** or 1 can of coconut milk

  • 1 oz cream cheese ** Omit if dairy-free

  • ⅓ cup chicken broth

  • ⅓ cup parmesan cheese ** replace with 1/3 cup of Brewer's Yeast

  • ½ cup cheddar cheese ** omit or replace with dairy-free cheese such as Daiya 

  • 1 tablespoon Italian seasoning

  • ½ teaspoon pepper

  • salt to taste

Instructions:

  1. Heat pan on medium/high heat, add 2 TBSP of avocado oil, saute onions until caramelized, add garlic and brown the pork chops (approx 3-5 minutes each side).

  2. Remove pork chops/chicken from pan.

  3. Add remining ingredients, and cook on medium until sauce thickens, whisk and stir continuously.

  4. Add pork chops/chicken back to sauce mixture and simmer on low for 5 minutes or until done.

Simple Cucumber Salad

Ingredients:

  • 1 field cucumber

  • 1 TBSP Italian Seasoning

  • 1 TBSP Apple cider vinegar

  • 2 TBSP Extra virgin olive oil

Instructions:

  1.  Slice cucumber into thin slices

  2.  Add Italian seasoning, apple cider vinegar and olive oil and mix well.

  3. Serve as a delicious side.
