Ingredients
1 lb grass fed beef strips or tenderloin cut into thin strips
1 clove garlic minced
1/4 cup tamari sauce x 2
1 inch cube of ginger peeled
1 TBSP coconut oil
3 carrots cut into coins
1 yellow bell pepper cut into strips
2 bok choy cut into 1 inch sections
2 medium zucchini cut into coins
24 almonds
Method
Combine grass fed beef, garlic, 1/4 cup tamari, ginger in air tight container and let marinate for 2-24 hours in refrigerator.
Heat coconut oil over medium heat in skillet then add beef. Cook until beef is browned then remove from heat.
Sauté carrots, yellow bell pepper, bok choy, zucchini and almonds in pan until carrots and almonds are soft.
Combine beef and remaining 1/4 cup tamari to vegetable mix and cook together for an additional 5 minutes.
Remove from heat and consume immediately.
